My Grandmother’s Cookbook: Bread recipes  

Faded, cracked, and dog-eared, my Grandmother’s archive of recipes has been in my family for more than 50 years, and luckily I’ve been gifted it for my own kitchen shelf.

Here, some of my favourite (and incredibly easy!) sweet and savory bread recipes.

Date and Nut Bread

Ingredients

  • 1 cup chopped dates
  • 2/4 cup hot water or coffee
  • 1/3 teaspoon baking soda
  • 2 tablespoons butter
  • 2/3 cup brown sugar
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup broken walnuts

Directions: 

  1. Add soda and boiling water to chopped dates, cool to lukewarm.
  2. Add sugar, butter and beaten egg
  3. Add to this, the sifted dry ingredients and nuts
  4. Turn into 1 large loaf pan or 2 small loaf pans
  5. Bake at 325 degrees for 45 minutes for large loaf, and 35 minutes for small loaves.

Honey Nut Bread

Ingredients: 

  • 1 egg
  • 2/3 cup honey
  • 1 cup milk
  • 3 cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup finely chopped nuts (walnuts, almonds)
  • 1 tablespoon melted butter

Directions:

  1. Beat egg well and blend with the honey and milk.
  2. Sift dry ingredients and add with the nuts to the first mixture.
  3. Add cooled, melted butter.
  4. Pour into buttered loaf pan and leave to stand for 1 hour.
  5. Bake at 325 degrees for 1 ¼ hours.

Danish Coffee Bread

Ingredients: 

  • 2 cups bread flour
  • 3 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • ¼ cup granulated sugar
  • 1/3 cup butter
  • 2 eggs
  • ¼ cup sultana raisins
  • ¼ chopped blanched almonds
  • 3 tablespoons of chopped citron peel

Directions:

  1. Mix and sift flour, baking powder and salt.
  2. Blend in butter and raisins.
  3. Combine sugar, eggs and milk- add gradually to dry ingredients and mix thoroughly.
  4. Roll to fit in an 8-inch layer cake pan.
  5. Brush top with milk or egg white (slightly beaten).
  6. Sprinkle over this mixture 1 tablespoon of granulated sugar, almonds and citron peel.
  7. Bake at 400 degrees for 20 to 30 minutes.
